LaTeX, pronounced lay-tech, is a document preparation system commonly used by scientists, engineers, mathematicians and other academic scholars. It is a system that lets the user focus on the content of the document with little distraction by the visual presentation. This works by the author specifying certain aspects of the document such as the margins, columns, headings, tables and figures, and letting the LaTeX system worry about the presentation of the content.
This is not a place for learning how to use LaTeX. If you wish to learn more about what it is and the basics of using it, please head over to Wikibooks. That website is the most complete resource for LaTeX that I could find and it has helped me immensely in learning LaTeX.
What is LaTeX?
Why Use LaTeX?
What does LaTeX have that Microsoft Word doesn’t? For the vast majority of documents, Word can do a fine job in formatting and displaying the document. However, when you get to the stage where you have many tables, figures, headings and references, LaTeX lets you manage them all in an easy way.
Templates?
As I mentioned, in LaTeX, everything must be specified up front in terms of structure. If you start from a blank document each time you wish to write something, it would take much too long to define everything before the stage where you can start writing. It is for this reason that I was curious to find a single resource for some templates for common document types, but when I looked I was unable to find any. Here I will add some templates that are primarily useful for students or academics. Most are not made by myself, I am nowhere near proficient enough to make them, so I will give credit where it is due.
Laboratory Reports
Lab report template with commonly used headings already included. Other components such as tables, chemical formulas and lists are also included as examples.

Curriculum Vitaes
Fairly simple CV with quite a few categories including: objective, education, professional experience, computing skills, publications, memberships, honors and interests. These can, of course, be taken out as required. The template relies on centering and bullet points heavily.
Note: .cls file must be in the same directory as the .tex.

#1 - Curriculum vitae - Long
Short 1-page CV with the following categories: objective, education, computer skills, experience, community service and extra-curricular activities.
Note: .cls file must be in the same directory as the .tex.

#2 - Curriculum vitae - Short
Long CV with the categories of: education, special skills, employment, professional affiliations and publications. Would suit an academic with a moderate amount of experience.
Note: .cls file must be in the same directory as the .tex.

Cover Letters
The layout here is fairly similar to the formal letter below but does not have the same strict formality about it. The body of this template says what should be included in each paragraph and goes a long way towards helping you write a professional sounding (and looking) cover letter.

Essays
This essay template includes everything you need to write an essay. Among its constituents are: title page, contents page, sections and subsections, referencing and citation, image inclusion (with figure text), inline image inclusion and numbered points.
I assembled this template from reading about LaTeX and have written multiple essays for university in this format.

#1 - Essay
Two column CV with colour and excellent layout. Sections are well commented in the .tex file for easy manipulation and creation of new categories. I adore this CV and have made my own CV out of this template.
This must be compiled using XeLaTeX as normal LaTeX will not compile it. You can find instructions at the source or through doing a search for how to compile XeLaTeX.

Laboratory Books
This lab book template takes advantage of the ‘labbook’ LaTeX class. The structure is straightforward and the contents page has links to take you straight to the entry of interest. Each experiment can be defined by a key word for repeat use or as a unique entry. I have added some examples.
Note: the template here has been edited by me for my liking. See original at the source.

Assignments
This assignment template includes a title page, contents page and many examples of layouts for question answers in a typical assignment. Has an excellent header and footer.
Included are two .tex files, one for the example and the other a blank template. Download both and copy/paste the code for the layout you like from the example file into the template for a hassle-free experience.

#1 - Assignment - Text
Similar to the first template but includes functionality to add figures and code to the assignment. Utilises packages to specify a coding language for which LaTeX will then auto-color common functions, arguments and comments. The example is for an example Perl script I wrote but the coding language and code extension can be changed within the template. This is a template for those that can read and understand LaTeX freely.

#2 - Assignment - Coding
Virtually identical to template two but has a few layout changes which may be more appropriate to some assignments. This is a template for those that can read and understand LaTeX freely.

Theses
This template uses a custom thesis class to make a stunning Masters or Doctoral thesis. Not only that but it includes a great deal of information on LaTeX and the thesis template itself. Includes examples of everything you will likely need in a thesis (bibliography, footnotes, figures, equations, sections).
I used this template for my Masters thesis with several slight modifications.

Calendars
A blank monthly calendar. The tex file is extensively commented to allow changing: the starting day from Sunday to another day, the day on which the 1st starts, reducing the number of days in the month and allowing wrapping to the next month following the 31st. Text can also be inserted into the calendar instead of vertical space.
Note: this template uses the calendar style by

#3 - Trip/Conference Itinerary
This cover letter has a custom stylized header and footer. The address field is placed so it can be seen in a windowed envelope.
This template is not for beginners as several things need to be tweaked in the .tex and the .lco files. Both files are needed. This must be compiled using XeLaTeX as normal LaTeX will not compile it.
